Hungarian Strudel Recipe – Video

Now, one of the most spectacular pastries a Hungarian kid can see at home is the strudel (rétes, say ‘ray-tesh’ in Hungarian). Not because it looks spectacular as a traditional Hungarian pastry, but the way it is made, the way the dough is stretched and stretched, until it is so flimsy that one fears it will just tear, but if you are clever with your hands, it won’t.
Here is a video recipe of a Hungarian strudel with cherry filling (but there are about 20-30 fillings you can make, from sweet apples or carrots to savoury grated cabbage, or even quark with sultana):
